Baked Bluefish Hungarian 6 med. potatoes 2 1/2 lb. lg. bluefish fillets 1 sliced green pepper 2 sliced tomatoes 1/4 lb. bacon, in 1 in. strips 1 tsp. paprika 1 c. sour cream (at room temperature)
Preheat oven to 400 degrees. Peel and cut potatoes into 1/4 inch slices. Boil them in salted water for 5 minutes; drain and scatter over bottom of large buttered baking dish. Make slashes in fish about 3/4 inch apart and insert in each one a slice of green pepper, tomato, and bacon. Place fish over potatoes, sprinkle with paprika, and bake 20 minutes. Spread with sour cream and bake 5 minutes more. Serve.
